A peek into what i've been cooking lately


As a new mom of two, I have been stretched in my cooking skills. After having my first son, I was able to fall back into routine of cooking fairly easily. It was doable to have one baby on my hip or in an ergo while chopping or sautéing.


However, having two little ones has forced me to become even more creative in the kitchen. I don't usually have the capacity to spend 60 minutes on a lasagna or an overly complicated recipe. I have found that I need quick and easy meals that still nourish and satisfy my growing family.


You might be in the same boat. That's why I wanted to share some of the meals that have been keeping me afloat in this postpartum era. Whether you just had a baby, or you are just another busy American, I hope these recipes bring ease to your week and a smile to your belly.

To make food prep faster, buy pre-cut sweet potatoes! Chopping the sweet potatoes is where the majority of your prep will occur for this dish.


If you find yourself in a pinch for time on this recipe, buy a frozen, pre-cut bell pepper and onion mix! Walmart and Trader Joe's both have pre-sliced options in their frozen vegetable sections.


Why go to PF Chang's when you can make it at home?


If you are a busy human, crockpot or instapot recipes will save your life. Never underestimate them. Start them before work or when your children are napping and you will thank yourself greatly right around 6pm.

I told my sister I made lentils for dinner. Without knowing the name of the recipe, she said it reminded her of a sloppy joe upon tasting it. It's safe to say this recipe tastes just like a real sloppy joe! Serve over a salad or rice.
